Blu-ray reads data at the same rate across all parts of the disc.
DVD data is read at different rates depending where on the disc the data is located.
Also, Dual-layer DVDs (most 360 games) revolve at 2/3rds the RPM of single layer DVDs.

Well, it would be a goddamned shame if they didn't use the SPUs. I believe Lucas Arts will...they're using some pretty advanced tech (DMM specifically, and how that interacts with the Physics engine) that I would say would REQUIRE them to use the PS3's capabilities.

I REALLY hope they iron out the framerate issues this game has.
I would think the PS3 version would fare a little better because of the intense physics calculations going on.
